VIDEO TUTORIAL: Instant Pot Curried Lentils with Air-Fried Plantains

Dust off your Instant Pot and Air Fryer and learn how to make this Meatless Monday Recipe that you can have on the table in 30 minutes!


Moving to a more plant-based diet does not have to be all or nothing. Start with a few meatless meals per week, like these Instant Pot Curried Lentils and Air Fryer Plantains.


Lentils are flavorful, inexpensive and a staple in meatless recipes. Plus, they’re loaded with plant-based protein and fiber to help improve your blood sugar and keep you feeling full and nourished.


Plantains are a rich source of fiber, antioxidants, and essential minerals. This hidden superfood is not only delicious, but also promotes digestive, cardiovascular, and ocular health with a powerful punch of fiber, potassium, and vitamins A and C.




Instant Pot Curried Lentils (30 minutes)

Serves 4


INGREDIENTS

  • 1 &1/2 tsp Coconut Oil

  • 1 cup chopped Yellow Onion

  • 1 cup chopped Green Bell Pepper

  • 1/2 cup peeled & chopped Carrots

  • 1 &1/2 tsp minced Garlic

  • 1 tsp Salt

  • ¼ to 1 tsp Black Pepper to taste

  • 1 cup undrained Diced Tomatoes

  • 1 cup rinsed & drained Brown or Green Lentils

  • 3 cups of water

  • 2 Tbsp freshly squeezed Lemon Juice

  • 1/4 cup chopped Cilantro or Parsley


DIRECTIONS

  1. Set an Instant Pot electric pressure cooker on the sauté setting and add the coconut oil. Once the oil has melted, add the onion and cook for 2 minutes.

  2. Add the bell pepper, carrot, and garlic; cook for 2 more minutes, stirring frequently.

  3. Add one tablespoon of water, curry powder, salt, and pepper and stir vigorously.

  4. Press the cooker’s “Cancel” button, then stir in 3 cups of water plus the tomatoes and lentils. Stir in about 3 cups of water

  5. Lock the cooker’s lid in place, adjust the setting to “Manual,” and cook for 8 minutes.

  6. Let it stand to release pressure naturally, at least 10 minutes. If necessary, carefully open the steam vent to release any remaining pressure.

  7. Open the lid and stir in the lemon juice. Taste and adjust the seasoning as desired. If the curry is too thick, add a bit more water to loosen as needed.

  8. Serve hot with rice (optional), sprinkled with cilantro.




 


Air Fryer Plantains (10 minutes)

Serves 4


INGREDIENTS

  • 1-2 Plantains (yellow with heavy black spotting)

  • 1/4 tsp Salt


DIRECTIONS

  1. Preheat air fryer to 350F /180C.

  2. Peel the plantain and cut into slices and add to a bowl.

  3. Gently mix in the oil and salt until plantains are coated on both sides.

  4. Put half the plantain slices in the air fryer basket in a single layer. Cook for 10 mins turning half way through.

  5. Remove the first batch and cook remaining plantain slices as above.

  6. Serve warm.
